In the Instant Pot, you can make both in 3 hours or less and have a healing chicken soup!
Great for treating inflammation and the cold or flu.

Moma❤Thrift’s Instant Pot "Roasted" Chicken & Bone Broth in 3 hrs!
- 1 whole chicken 3+ lbs
- 2 1/2 cups water
- 1 TBSP Italian Seasoning
- 1/2 TBSP Onion Powder
- 1/2 TBSP Garlic Powder
- 1 tsp Salt
- 1 tsp Pepper
- 1 Chicken Carcass left over from roasting
- 1 large Carrot
- 2 Celery Stalks
- 1 Yellow Onion
- 5 cloves Garlic
- 2 TBSP Apple Cider VInegar
Place the rack in Instant Pot.
Add 2 1/2 cups water. (for 8qt instant pot, 1 for 6qt)
Place the chicken on wrack breast face up.
Place the lid on and switch vent to seal.
Select Manual Pressure and set appropriate cook time.
(the weight of the bird x 6. Exp: 3lb bird would be 18mins)
Let the pot naturally release.
You can be done at this step or you can Broil in the oven for about 4 mins to give the chicken more of a roasted feel. If you do not broil it will just be moister and fall apart easily. Great for shredding!
Add Chicken carcass to pot, without the rack.
(Just reuse pot no need to wash to keep chicken drippings from cooking earlier.)
Add the rest of the ingredients the fill with filtered water up to the 2/3 line.
Place the lid on and set the vent to seal
Select Soup/Broth button. It should come up with 1hr 20 minutes.
If not select that time.
When it is done manually release.
Strain the broth and add to mason jars leaving an inch of space at the top.
Once cooled store in fridge or freeze by laying them on their sides.
