I love Cheap, really love Easy, love Healthy and the cherry on top… My kids love it!
This recipe takes me 20 minutes tops. Cost me about $10 and feeds our family if 6.
Now when I am looking for a recipe online I really DO NOT like the 4 paragraphs about someone’s personal life I have to read through before I can see the recipe. So I will save you from that. Also, I don’t really do recipes. I change things up a little each time so play around with the seasonings and see how you like it.
Moma♥Thrift’s Mexican Bowl
2lbs Ground Beef
3 Cans Black Beans
1 Large can Rotel
1 cup Brown Rice
2 cups Beef/Chicken/Vegetable Stock
1 tsp Garlic Salt
1 tsp Onion Powder
1 tsp Paprika
1/2 tsp Tajin Seasoning
- Cook brown rice in beef, chicken or veggie stock according to directions on rice package. (Mine was 1 cup rice, 2 cups water but I use stock for flavor and health benefits. Bring to boil then turn to low and simmer with lid for 15-20 mins.)
- Brown ground beef, drain and add seasonings.
- Drain black beans and Rotel in a colander, mix in the pan and cook until warm.
- Layer brown rice, bean and Rotel mixture, ground beef and top with as much sour cream and shredded cheese as you’d like in a bowl.
Super simple recipe that my kiddos love.
